This Traditional Balsamic Vinegar of Modena can be considered the only one organic and biodynamic certificate. It is produced by aging the acetified cooked must in barrels, all rigorously different both for the type of wood and for the size. Traditional Balsamic Vinegar of Modena follows a maturation process of up to 12 years, which gives it unmistakable properties and aromas.

The only one traditional Balsamic Vinegar of Modena PDO biodynamic in the world. Aged at least 25 years in barrels of different woods and sizes (Cherry, Acacia, Mulberry, Ash, Oak, Chestnut, Juniper), according to the classic procedure of the Solera method applied to Biodynamics where the planets are connected to different woods. The tasting of this Traditional vinegar is a ritual, deserves a taste on a tea spoon (ceramic).
Pairings: raw on a good aged Parmisan, wild strawberries, cream gelato, figs, often used as a digestive after a meal, sipping it from a tea spoon.
This extraordinary Brunello di Montalcino belongs to the farm "San Polino". Its color is a not too intense ruby red. The aroma is floral, very fruity, with violet and red and black currant hints, and complemented by licorice, vanilla, a touch of balsamic and smoky mineral notes. The taste is round and soft, with velvety tannins that frame the wine. The finish is long and savory. Wonderful balance and harmony. The pairings include structured dishes such as roast and red meats, aged cheeses. It is also a good meditation wine.
The farm "I Mandorli" is located in Suvereto, in Val di Cornia, about 300 meters above sea level. A hill that on one side sees the jagged landscape of the Metalliferous Hills, an area rich in minerals such as iron, manganese and geothermal energy, while on the other it overlooks the plain of the Gulf of Baratti. From the beginning it was decided to carry out the production processes according to biodynamic and homeodynamic farming principles. This wine is composed of 75% Cabernet Sauvignon and 15% Cabernet Franc, its color is intense ruby red, with aromas of red fruit, herbaceous and bell pepper. The taste is round, firm.
Extra Virgin Olive Oil 0,5 lt - Villa Montecastelli 2020
The farm Villa Montecastelli 3has always used organic and biodynamic farming techniques. The fertilizers are self-produced, through the composting of horse manure, wood chips and pomace, with the inoculation of Effective Microorganisms. The vegetable garden and olive groves are sprayed with biodynamic preparations. Synthetic pesticides such as dimethoate but also of mineral origin such as copper and sulfur were banned since the very beginning. The constant search for quality in the production of food raw materials has as its fundamental premise the health and fertility of the earth and Montecastelli is one of the best examples at an international level.

Tuscan extra virgin olive oil is traditionally obtained by harvesting and pressing olives of different cultivars at the same time. The olive groves are mainly composed of the species Frantoio, which releases the typical spicy and pungent tones, Pendolino, known for its sweetness, Leccino, characterized by the distinctive aroma of hazelnut and Moraiolo, which differs for the bitter taste and vegetal hints like that of artichoke. Only this last cultivar is made from the oil we propose.

Produced from the careful blend of cooked must and wine vinegar. The Bronze balsamic vinegar has an intense aroma, a round and pungent taste, with a moderately marked sweet note. It is aged in 220-liter oak barrels. Obtained from selected mainly red grapes grown with the Organic and Biodynamic method. No preservatives or dyes are added during the production processes.

Obtained from the mixture of cooked must and wine vinegar, aged in 220 liter wooden barrels (barrique). Produced only from organic and biodynamic grapes grown in Italy, mainly from red grapes such as the typical Lambrusco or Sangiovese ones. No dyes or preservatives are added. It is one of the most popular products for taste and for the price-quality ratio. Being characterized by a high density, it has an intense aroma and a round taste.

This is the best Balsamic Vinegar in the category of PGI certified by Acetaia Guerzoni. The perfect harmonization between cooked must and wine vinegar is perfectly fitted for the most demanding consumer. This Balsamic Vinegar of Modena is very dense, obtained from typical red organic and biodynamic only grapes such as Lambrusco or Sangiovese. The long aging in 220 liters oak barrel is the reason for the overall harmony improvement. Thus, the addition of any type of preservative or colouring is unnecessary.
Pairings: meat dishes, perfect also with seasoned cheese, fruit, ice cream.
0,5 l Olio EVO Azienda Agricola San Giovanni 2020
Coming from Barberino Tavarnelle, a small town between Florence and Siena, this oil has a herbaceous aroma, with hints of almond and artichoke. The taste is strong, robust, with an aftertaste of artichoke and almond. It goes well with all dishes of the Mediterranean cuisine, strictly raw. Every type of vegetable receives a benefit from it; it has a high content in polyphenols, therefore a great healing effect.
This oil comes from a small farm in Castellina in Chianti. It has a fruity aroma with hints of fresh olive, artichoke and almond, the taste is bitter and slightly spicy. It is great as a dressing for bruschetta, legume soups, seasonal vegetables.

Prugnolo Gentile, which is how the Sangiovese is called in the Montepulciano area, is the predominant grape variety of this amazing Nobile Riserva. It ages from 28 to 32 months in Slavonian or French oak with a capacity of 5 to 25 hl. Its maturation can be deducted by the ruby red color tending to garnet. It immediately reveals aromas of cherry and marasca cherry, floral hints, and in the end, notes of tobacco, spices and balsamic. Savory and elegant, with robust tannins, it is a harmonious wine that can be combined with red meat and game.
The farm "I Balzini" is located in the town of Barberino Tavarnelle. Right from the start, the intention was to obtain products that stood out from the typical products of the area, in order to exploit the geological characteristics of the land. The choice was not to produce Chianti wines, but to encourage the production of IGT or Super Tuscan wines. The grapes used for the production of Black Label are Cabernet Sauvignon and Merlot; it has an intense ruby red color, with purple notes, the nose is intense and elegant, with notes of black berries along with hints of vanilla, tobacco and cocoa. The mouthfeel is full-bodied, very complex and elegant, with distinct and refined tannins. Meditation wine, it goes well with complex meat dishes, game, mature cheeses.
Tuscany in a box
Montenidoli is an estate located on a high hill from which you can observe the beautiful medieval town of San Gimignano. An uncontaminated area, far from the pollution of industrial production centres. Where vineyards and olive groves look like patches of land torn from the vigor of the woods. An area particularly suited to both wine and oil production. Its color is golden straw yellow. The nose receives notes of herbs, almonds and caramel. It is dry, spicy, with a long aftertaste to the palate. Perfect pairings are aperitifs, starters, vegetarian and vegan dishes, fish courses, white meats.
Matteo and Mina are the producers of this excellent rosé, organic and biodynamic, from the province of Lucca. The Sangiovese and Vermentino varieties are combined to give life to a pale pink wine, with nuances of onion skin. It releases floral notes of wild rose and white flowers, fruity notes of raspberries and citrus, while the palate is fresh, full, savory and with a good balance. The finish is persistent, savoury and silky. To be combined with fish dishes, shellfish, white meat and cheese.
Renzo Marinai’s Chianti Classico needs few presentations. A high quality organic wine coming from the area of Panzano in Chianti that expresses itself through a brilliant ruby red color, with floral aromas and red fruits, spicy notes of black pepper. The mouthfeel is fresh, fruity, sapid and persistent. It goes well with long or medium-aged cheeses, very elaborate red or white meats.
This extra virgin olive oil comes from Barberino Tavarnelle, a small town between Florence and Siena. In 2006, Azienda Agricola San Giovanni was able to purchase and install an oil mill to make its production autonomous. Technological prodigy, the machine is an innovative continuous cycle crusher of the prestigious Mori brand, ideal for cold pressing, with controlled oxygen entry to avoid oxidation phenomena. This fantastic product is a blend of the following cultivars: Morellino, Pendolino, Maremmano, Leccino del Corno, Frantoio. Thanks to the soil composition, the perfect altitude and exposure, and of course to the ability of the owners, the farm is able to produce an oil with 0,1% acidity, organic, refined and stored in stainless steel tanks of 300 liters, under argon. It releases herbaceous hints, almond and artichoke. To the palate is strong and robust, with artichoke and almond aftertaste. Strictly uncooked, it goes well with all the dishes of the Mediterranean cuisine. Every type of vegetable benefits from it; high content in polyphenols, which means great healing effect.
It was 1998 when Francesco Illy, a well-known international coffee producer, managed to start the biodynamic farm Podere Le Ripi. Until then the farm was inhabited by a shepherd with his flock. Relying on a young and experienced team, Illy produces amazing wines. This Rosso di Montalcino shows an intense ruby red color, with elegant nuances of orange. The nose emits intense hints of cherry, strawberry and violet, with herbaceous balsamic notes. In the mouth, the remarkable structure highlights a great minerality and a long persistence. It matches an entire meat menu, medium-aged cheeses, mushrooms dishes.

A very representative wine of the area of Castellina in Chianti, of a brilliant ruby red color, tending to garnet, with floral and red fruit notes and a marked minerality. The palate is fresh, elegant, complex, and in the kitchen is very versatile. It goes well with pasta, meat and cheese.
White wine, robust and soft, with a nice intense yellow color. Its aroma is fruity with notes of pear and peach. The mouthfeel is fresh, elegant and complex, with hints of flint and citrus notes. Perfect for seafood, vegetarian pasta dishes, cheeses, white and boiled meats.
The rosé by I Balzini is floral and fruity, with tea rose, muguet and red fruit scent. Peach, melon and lemon emerge from the glass. Fresh and lively on the palate, with excellent acidity and very good persistency. It can be paired with aperitiv, appetizers, fish and white meat.

A choice of lighter wines to enjoy in convivial moments
This Brut sparkling wine has a very pale pink color. The aroma is fragrant, intense, with notes of fresh fruit such as raspberries. In the mouth it is an explosion of freshness with an excellent balance between acidity, body and sugar content. Fine and persistent perlage. The finish is savory, fruity and mineral. Excellent with an aperitif based on fish, fresh goat cheese, cold cuts, vegan and vegetarian dishes.
This natural sparkling white wine is to be discovered. Straw yellow tending to golden, it is intense and fragrant. There are notes of white flowers, yellow and white fruits. In the mouth it is fresh, savory, with an aftertaste of beer yeast that pleasantly surprises. Perfect with aperitif, with pizza and baked goods.
This Sauvignon wins you over with its golden yellow color, its floral notes, ripe citrus, and the characteristic herbaceous scent. The mouthfeel is very round but still fresh. It leaves a long, flowing and harmonious finish. It can be drunk alone, or with fish canapés, vegetarian or with simple meat dishes.
A great Vernaccia di San Gimignano could not be missing: straw yellow with golden reflections, the bouquet gives off hints of herbs, almonds and caramel and the taste is dry, spicy and with a long aftertaste. It goes well with aperitifs, appetizers, vegetarian or vegan dishes, fish menus, white meat.
Vallone di Cecione produces this rosé wine of intense pink color, sometimes tending to orange. There are notes of peony and wild strawberry, while in the mouth it is dense, characterized by lively freshness and good salinity. Elegant finish with fruity hints. It goes well with appetizers, cheeses and light meals, with seasonal vegetables and fish.
Another fine rosé wine, of a pale pink color. It reveals hints of raspberries and violets to the nose, passing to orange blossoms and citrus fruits. It has a full taste, very dry, with well modulated acidity. The finish is long, salty, mineral. It goes perfectly with aperitifs, appetizers, vegetarian and vegan dishes, fish menus, white meat.

An “educational” selection of red wines from very different areas of Chianti
From the vineyards that populate the stony slopes surrounding the fortified farmhouse "Corzano", in the area of San Casciano Val di Pesa, was born this Chianti Colli Fiorentini. The color is ruby red; it releases hints of berries, plum, violet, peonies and subsequently pine needles and laurel. The mouthfeel is round, soft and elegant, with light tannins. It can accompany an entire menu based on meat.
Moving towards the heart of Chianti Classico, in the area of Barberino Tavarnelle, we encounter a wine with a bright ruby red color. The intense aroma of ripe red fruit then leaves room for mineral hints of rock and tertiary notes of black pepper. The taste is fresh, savory, with strong tannins. It goes well with pasta with sauce, stewed meat, hard cheese, chestnuts.
The Vallone di Cecione farm, a very small family-run business for generations, borders the most famous reality of Renzo Marinai, however the wines are very different. Chianti Classico is a wine very tied to tradition. It has a pale ruby red color and the bouquet is very fruity with hints of cherry, red fruits and violet. The mouthfeel is fresh, very pleasant and unobtrusive. We recommend to pair it with medium-long aged cheeses, red meats, game, pasta with meat sauce.
Setriolo is another very small farm in the area of Castellina in Chianti, the heart of Tuscan wine production. A brilliant ruby red, tending to garnet, this Chianti Classico has a floral bouquet, with notes of red fruits and spices of black pepper. It is fresh, elegant, full-bodied. Its use in the kitchen is very versatile: it goes well with pasta dishes, meats and cheeses.
With this Chianti Colli Senesi we move towards the area of San Gimignano, in the province of Siena. It has a brilliant ruby red color, and expresses floral notes and red fruits to the nose. It is fresh on the palate, with ferrous notes, and well resolved tannins. It is a daily wine to match with meat dishes.

San Polino is a biodynamic farm dedicated exclusively to the production of Sangiovese grapes, typical expression of the territory of Montalcino. This wine has a pale red color, and the bouquet is floral and fruity, with notes of ripe red fruit, mostly cherry, minerals, with a hint of cinnamon. The mouthfeel is fresh, persistent, with strong tannins. It can be combined with cold cuts or more structured meat meals.

Molino di Sant'Antimo is located between the southern slope of the hill of Montalcino and the slopes of Monte Amiata, surrounded by a unique landscape. Among its 70,000 bottles produced annually, about 15,000 are destined to the production of Rosso. Its color is ruby red, with aromas of violet and red fruit, which give way to a balsamic touch, licorice and black pepper. In the mouth it is rich, soft and of extraordinary freshness. Overall, a harmonious wine, which is mainly combined with a menu based on meat.
Annually, Molino di Sant'Antimo produces about 25,000 bottles of this excellent Brunello di Montalcino. Its color is a beautiful ruby red, and the aroma is very intense, with hints of berries, cherry, strawberry, slightly balsamic notes and black pepper and vanilla. The mouthfeel is aromatic, velvety, elegant and persistent. Very harmonious, it goes well with main courses of meat and game.

The "Cielo d'Ulisse" is one of the highest expressions of Podere Le Ripi’s production. The wine shows a delicate garnet red color; the aromas best express the hints of a large oak cask, with notes of red berried fruits and cherry, licorice and undergrowth. The gentle tannins support a perfectly balanced acidity. We recommend pairing it with fairly structured main courses of meat, game, but also with the classic "Fiorentina" steak.

Le Terre del Sillabo is a farm run by the legendary Giampi Moretti, in the Freddana valley, near the beautiful city of Lucca. All his wines are powerful and elegant the same time. This is a 100% Chardonnay that makes short macerations on the skins and a fermentation in steel and in barrique. It has an intense straw yellow color with golden reflections.The predominant aromas are floral and herbaceous, with references to medicinal herbs such as chamomile. The palate is soft, quite dense but balanced. It can be drunk alone, or combined with white meats, elaborated vegetarian or vegan dishes, or with fish dishes.
An extraordinary Vernaccia that ages 12 months in terracotta amphorae, followed by several months in oak barrels. The color is intense yellow, as intense as the bouquet, with notes of apple, grapefruit and vanilla, accompanied by a great minerality. The sensations in the mouth include freshness and elegance. It can be appreciated as an aperitif, with appetizers, vegetarian or vegan dishes, with blue cheeses, fish and white meat menus.

This Vermentino comes from the hills of Lucca, and its main characteristic is delicacy. It shows a pale yellow color with greenish reflections. In the mouth it is intense, complex and persistent. It expresses notes of white flowers along with pear, peach and grapefruit. Light spicy note of green pepper and Mediterranean herbs such as sage and mint. The mouthfeel is fresh, full, savory and well balanced. The savory finish is spicy and citric. It is a wine that can be drunk as an aperitif, or together with fish and shellfish dishes.
This wine comes from San Gimignano, and as a dominant note it has intensity: intense yellow color, important bouquet with notes of grapefruit and vanilla, fresh taste, fruity and elegant. As pairings we recommend aperitifs, appetizers, vegetarian and vegan dishes, blue cheeses, fish and white meat menus.

An ancient Tuscan native grape variety, the Canaiolo, cultivated according to biodynamic farming principles in the Conca d'Oro of Panzano. The result is a product with an intense ruby red color, with a floral aroma of wild flowers. In the mouth it has a very pleasant drink, with a long aftertaste. The tannins are unobtrusive and for this reason it is recommended the pairing not only with medium-long aged cheeses, delicate red meats, stews and pasta, but also with elaborate fish dishes and menus based on meat.
A 100% Sangiovese, a Super Tuscan wine from San Gimignano, with a vermilion red color. The aroma gives off notes of red berried fruits and an intense herbaceous bouquet. The taste is full, vigorous and persistent. It goes very well with meat main courses.
And finally, a traditional wine, produced in Castellina in Chianti. This Chianti Classico Riserva has a brilliant ruby red color, tending to garnet, the bouquet has floral and red fruit notes, with a marked minerality.
